The stumps are loosened with a hand chisel and the surface roots are cut. Next are the plantings in the gaps with new plants or catabolas. New plants result from clonal selection.
In January we start winter pruning. Prune strictly, low, with long heads keeping the traditional cup. The spraying involves wetting sulfur and copper before flowering and dust sulfur after. Vegetation also strictly with 6-8 terminal fruiting shoots. During the percasmo we avoid sprays and climaxes.
August finds us checking out the foliage. And finally the harvest usually starts at the end of September.
During the entire growing season we do not use any type of fertilization or irrigation. This is how we achieve very low productions with healthy and concentrated fruit.
